Easy Butter Chicken

Serves: 4

MUST HAVE:

  • 1 brown onion

  • finely diced
2 cloves garlic

  • finely chopped
2cm piece ginger

  • finely chopped
500g chicken or tofu

  • cut into 3cm cubes


  • a handful of green beans trimmed & chopped


  • 200ml coconut milk


  • 1 packet Simply Wholesome Pantry Butter Chicken Recipe Base


  • 1 cup baby spinach


  • Simply Wholesome Pantry Quick Cook Grains (of choice)


For serving:

  • Naan or Roti

For garnish:

  • Fresh coriander

YUMMY EXTRA BITS (adds that flair):

  • 1 lemon, juiced

Method:

  1. Heat 1 tablespoon of oil in a pot/pan over medium heat. Add the diced onion, garlic, and ginger. Cook, stirring, for 2-3 minutes, until softened. Add the diced chicken (or tofu) and cook for 3-4 minutes, stirring occasionally, until browned.


  2. Stir in the Simply Wholesome Pantry Butter Chicken Recipe Base and cook for 1 minute. Add the chopped green beans and cook for an additional 2 minutes. Pour in the coconut milk and stir to combine. Cover and simmer for 5-7 minutes.

  3. While the curry is simmering, cook the Simply Wholesome Pantry Quick Cook Grains according to the package instructions.


  4. Once the curry is ready, stir in the baby spinach and cook for another minute until wilted. Serve the curry over the cooked grains, and garnish with fresh coriander and a squeeze of lime.
