Crispy Mediterranean Chicken Parmigiana

MUST HAVE:
2 large chicken breasts
1 cup breadcrumbs
1/2 cup plain flour
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese

1 egg, beaten
1/4 cup vegetable oil (for frying)
Salt and pepper to taste
Fresh basil leaves
Method:
Slice both chicken breasts in half lengthwise for thinner cutlets. Preheat your oven to 190°C. Season the chicken with a pinch of salt and pepper. Set up your breading station: in one shallow dish, place the breadcrumbs, in another, the plain flour, and in a third, the beaten egg.
Dip each chicken breast into the beaten egg, followed by the flour, then coat generously with the breadcrumbs. Press gently to ensure the breadcrumbs stick well. Set the breaded chicken aside. Heat vegetable oil in a large frying pan over medium heat. Once hot, fry the chicken breasts for 4-5 minutes on each side, or until golden and crispy. Work in batches, if necessary, and set the cooked chicken aside on a baking tray.
Spoon 2-3 tablespoons of the Simply Wholesome Pantry Mediterranean Recipe Base over each chicken breast, spreading it out evenly. Sprinkle a generous layer of Parmesan cheese over the chicken, then top with a thick layer of shredded mozzarella. Place the chicken in the preheated oven and bake for 10 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Once out of the oven, garnish with fresh basil leaves. Serve your crispy, cheesy Chicken Parmigiana with a side of your favourite veggies or a salad for the perfect meal!
