Sesame Ginger Chicken Quinoa Bowl

Serves: 4

Ingredients:

  • 1 cup Simply Wholesome Pantry Quinoa and Lentils Quick Cook Grains

  • 2 cups cooked shredded chicken

  • 2 cups shredded red cabbage

  • 1 large carrot, julienned or grated

  • 2 spring onions, finely sliced

  • 1 bunch fresh coriander, roughly chopped

For the dressing:

  • 3 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 tbsp honey or maple syrup

  • 1 tbsp grated ginger

  • 1 clove garlic, minced

Method:

  1. Bring a pot of water to a boil. Add the Quinoa and Lentils Quick Cook Grains and simmer for 10 minutes. Drain and let them cool.

  2. Whisk together the soy sauce, sesame oil, rice vinegar, honey (or maple), ginger, and garlic to make the dressing.

  3. In a large bowl, toss together the shredded chicken, cooked quinoa and lentils, cabbage, carrot, and spring onions. Drizzle over the dressing and mix well.

  4. Serve it up with some fresh coriander on top.
