One Pan Creamy Chicken

Serves: 4

MUST HAVE:

  • 2 large chicken breasts


  • 3 tbsp extra virgin olive oil, divided


  • Salt and pepper, to taste


  • 1 brown onion, sliced


  • 2 cloves garlic, finely chopped


  • 2 tsp dried oregano


  • 1 tsp paprika


  • 1 packet Simply Wholesome Pantry One Pot Creamy Recipe Base
1/2 cup milk,

  • 100g baby spinach
1/2 cup Parmesan cheese

Method:

  1. Slice the chicken breasts in half lengthwise. In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Season the chicken breasts generously with salt and pepper. Sear the chicken for about 5 minutes on each side, until golden brown. Transfer to a plate.


  2. In the same skillet, heat the remaining 2 tablespoons of oil over medium heat. Stir in the onion, garlic, oregano, and paprika, cooking until fragrant, about 1 minute. Add the Simply Wholesome Pantry One Pot Creamy Recipe Base and milk to the skillet. Stir in the Parmesan, and add the baby spinach. Season with salt to taste. Allow the sauce to simmer and thicken slightly for 3-4 minutes, letting the spinach wilt into the sauce.


  3. Return the seared chicken breasts to the skillet, spooning the sauce over the chicken. Cook for another 7-10 minutes, or until the chicken is fully cooked through. Transfer the chicken to a platter, spoon the creamy sauce over the top, and serve.
