Cheesy Italian-Style Meatball Subs

MUST HAVE:
For the Meatball:
500g minced beef
1/2 cup breadcrumbs
1 egg
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1/4 cup grated Parmesan cheese
1 tbsp olive oil (for cooking)
For the Sauce:
1 tin (400g) crushed tomatoes
1 packet Simply Wholesome Pantry Mediterranean Recipe Base
1 tsp dried oregano
Salt and pepper, to taste
For Assembling:
4 small baguettes
1 cup shredded mozzarella cheese
Extra Parmesan cheese
Fresh basil or parsley, for garnish
1/4 cup basil pesto
Method:
In a large bowl, combine the minced beef, breadcrumbs, egg, garlic powder, oregano, salt, pepper, and Parmesan. Mix well and roll into small meatballs (about 1.5 tablespoons each). Heat the olive oil in a large pan over medium heat. Add the meatballs and cook for 6–8 minutes, turning occasionally, until browned on all sides.
In a pan, pour in the crushed tomatoes and stir in the Simply Wholesome Pantry Mediterranean Recipe Base and dried oregano. Season with salt and pepper. Simmer uncovered for 10–12 minutes, until the sauce thickens slightly and meatballs are cooked through.
Preheat the oven grill. Slice open the baguettes and spread a little pesto on each side. Spoon in the meatballs and sauce, top with shredded mozzarella and extra Parmesan. Place under the grill for 2–3 minutes, or until the cheese is melted and golden.
Finish with a sprinkle of fresh basil or parsley and serve hot.
