Asian Mince, Broccoli and Rice

Serves: 4

Ingredients:

1.5 cups white or brown rice, rinsed well

3 cups water

1 teaspoon salt
-
2 tablespoon extra virgin olive oil or peanut oil

1 small head broccoli, broken into florets

1 cup snow peas, sliced
-
2 cloves garlic, finely chopped
-
4cm piece ginger, finely chopped
-
3 spring onion, finely sliced
-
500g mince of choice (I used pork, but you can use beef or chicken)

2 carrots, julienned sliced or grated

1 teaspoon honey or pure maple syrup

1 teaspoon sesame oil

2 tablespoons sesame seeds
Method:

Place rice, water and salt in a medium saucepan and bring to a boil. Lower the heat, cover, and simmer for 15 minutes (longer for brown rice, check packet). Drain and set aside.

For the sauce: Mix together the Simply Wholesome Pantry Asian Stir-fry Recipe Base, honey/maple syrup and sesame oil.

Place a large frying pan onto medium heat and add half the olive oil. Add the broccoli and snow peas and cook, stirring for approx. 2 mins. Remove the veggies and set them aside.

Add the remaining olive oil to the pan. Then add the garlic and ginger, stirring for 2 mins. Add the spring onion and stir through. Add the mince and break it up with a wooden spoon, cooking for 5-7 minutes. Add in the sauce and stir through for 1 minute. Add the pre-cooked green vegetables and the fresh carrot to the pan and stir through for 1 minute. Turn off the heat. Add the sesame seeds.

To serve: add rice to bowls and top with the hot beef and vegetables. Sprinkle over some extra sesame seeds.
