Asian Stir-fry

MUST HAVE:
-
500g chicken, beef, pork or tofu, sliced into strips

1 brown onion, sliced

2 cloves garlic, finely chopped
-
2cm piece ginger, finely chopped
-
1 carrot, cut into match sticks
-
1 cup mushrooms, sliced
-
2 bunches bok choy or broccoli, chopped
-

NICE TO HAVE:
-
1 cup white/brown rice to serve

3 spring onion, finely sliced
YUMMY EXTRA BITS (adds that flair):

½ cup roasted cashews, roughly chopped
Method:

Season protein with salt & pepper. Heat 1 tablespoon of oil in a large frying pan on medium/high heat. Add the protein and brown on each side until just cooked through. Remove and set aside.

Add remaining oil to the frying pan. Add onion, garlic & ginger and stir-fry, for 2 minutes. Add carrot & mushrooms and stir-fry, for 3 minutes. Add Simply Wholesome Pantry Asian Stir-fry Recipe Base & bok choy, then toss through for 2-3 minutes.

Serve on a bed of rice and enjoy! Sprinkle over spring onion and cashews. So good!
Swap out carrot/mushrooms for: red/green/yellow capsicum, broccoli, broccolini, zucchini
Swap out bok choy for: choy sum, spinach, cabbage
