Mexican One Pot

Serves 4

MUST HAVE:
-
500g beef, pork or chicken mince
-
1 brown onion, finely diced
-
2 cloves garlic, finely chopped
-
1 red capsicum, diced
-
400g canned corn, drained
-
1.5 cups jasmine rice, rinsed
-
3 cups chicken/beef stock
-

NICE TO HAVE:
-
1 avocado, diced
-
1 cup grated cheese
-
1 tomato, diced
YUMMY EXTRA BITS (adds that flair):
-
Sour Cream
-
Cos/iceberg lettuce, shredded
-
Coriander
-
Lime
Method:

Add 1 tbsp oil to pan. Cook onion and garlic for 2-3 minutes. Add mince and cook, breaking it up, for 5 mins. Add red capsicum and cook for 2 minutes.

Add Simply Wholesome Pantry Mexican One Pot Recipe Base, rice and stock. Stir through and let simmer for 15 minutes until rice is cooked.
Serve multiple ways:
Serve beef in a Mexican bowl or with tacos/burritos with optional fillings including: shredded lettuce, diced tomato, diced red onion, coriander, grated cheese, sour cream, avocado, jalapeno.
