Mediterranean One Pot

MUST HAVE:

4 small chicken breasts, approx.. 600g

1 brown onion, finely diced
-
2 cloves garlic, finely chopped
-
1 large zucchini, chopped into half moons
-
1 large tomato, diced
-
1 cup risoni
-
2.5 cups chicken stock
-

NICE TO HAVE:
-
2 cups baby spinach
-
100g feta cheese, crumbled
YUMMY EXTRA BITS (adds that flair):

Parsley or Basil
Method:
-
Season chicken with salt & pepper. Heat 1 tablespoon oil in a large pot/pan on medium heat. Cook chicken breasts each side until just cooked through. Remove and set aside.

Add 1 tbsp oil to pan. Cook onion and garlic for 2-3 minutes. Add zucchini & tomato and cook for 2 minutes.

Add Simply Wholesome Pantry Mediterranean Recipe Base, risoni and chicken stock. Stir through and let simmer for 10 minutes until pasta is cooked. Stir through spinach. Crumble over feta & garnish with herb of choice. Ripper dish!
