
Zesty Lemon Tuna and Grain Salad

Ingredients:

1 cup Simply Wholesome Pantry Quinoa and Bulgur Quick Cook Grains

2 x 185g cans tuna in olive oil, drained

1 cup cherry tomatoes, halved

1 small cucumber, diced
-
¼ cup fresh parsley, chopped
-
2 tbsp capers, drained
-
Zest of 1 lemon
-
Juice of 1 large lemon
-
3 tbsp extra virgin olive oil

Salt & black pepper, to taste
Method:

Bring a pot of water or broth to a boil. Add the Quinoa and Bulgur Quick Cook Grains, then cover and let sit for 10-12 minutes. Fluff with a fork and let cool slightly.

In a large bowl, toss together the cooked quinoa and bulgur, tuna, cherry tomatoes, cucumber, parsley, capers, and lemon zest.

Drizzle over the lemon juice and olive oil, season with salt and black pepper, and toss well.

Serve chilled or at room temperature - so fresh and so easy!
